Orang Peel (陳皮), Clove, (丁香), Green Szechuan Peppercorn (青花椒), Red Szechuan Peppercorn (紅花椒), Fennel (小茴香), Star Anise (八角), Licorice (甘草), White Amomin Fruit (白豆蔻), Fructus Amomi (香砂仁), Nutmeg (肉豆蔻), Ligusticum Fruit (香果), Cinnamon (桂皮), Lysimachia (靈香草), Angelica Daurica (當歸), Amomum Fruit (Tsaoko草果), Bay Leaf (香葉), Lemongrass (香茅)
Step 1: Wash and soak all the spices for 30 minutes. Optional: Blanch and add 5lbs of meat, tofu, and/or eggs (not included).
Step 2: Insert all the spices into a filter bag (included). Optional: Add dried chilies of your own choice (not included).
Step 3: With all the ingredients in a stockpot, add 5-6 slices of ginger (not included), add 2.5 liters (10 1/2 cups) of water, and heat on high until boiling.
Step 4: Reduce heat to medium-low and simmer for about 1 hour.
Step 5: Add 1 tablespoon of rice wine on high heat for 3-5 minutes, season with salt and soy sauce.
Store in a cool dry place, away from sunlight.
